After a brief hiatus, I am back! I have been moving and settling into a new house with new housemates and a new, exciting job! I have been busy but I have really missed being in the kitchen and blogging. Due to working full time, I will really only be able to post once a week, if that, but I will try!
Today was the first day I really had time, and an open kitchen, to bake. I decided to make muffins! I love muffins and these are amazing! They are moist, slightly dense, and seriously fresh! Do you have an orange tree overflowing with oranges? Well, then this is a perfect recipe for you to try since it contains a whole orange, peel and all.
This recipe is adapted from here. I changed how to prepare the batter and added vanilla and salt along with the streusel.
- 1 orange, quartered (with peel)*
- 1/2 C orange juice (freshly squeezed)
- 1/2 C salted butter, softened
- 3/4 C granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 3/4 C all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- Streusel Topping:
- 1/4 C all purpose flour
- 1/4 C + 1 T old fashioned oats
- 2 T granulated sugar
- 1 pinch salt
- 3 T salted butter
