Carrot Cake + Morning Glory Muffins = Carrot Glory Mini Loaves
Carrot Cake: A cake flavor that all children fear which, I’m convinced, is why adults provide it at many functions.
Morning Glory Muffins: A unique muffin loaded with dried fruit, nuts, and spices that truly is the glory of the morning.
Carrot Glory Mini Loaves: The best of both worlds: cream cheese frosting, sweet raisins, cinnamon and nutmeg, and carrots, of course!
They are simple little loaves but they pack a flavorful punch. The frosting is optional since they are pretty darn good naked but frosting never hurts anything. These little guys are perfect for breakfast or a snack to enjoy with tea.
- 1 C all purpose flour
- 1 t cinnamon
- 1/4 t nutmeg
- 1 t baking soda
- 1/2 t baking powder
- 1/4 t salt
- 2/3 C apple sauce
- 2 eggs
- 1 t vanilla
- 3 T orange juice
- 1/2 t orange zest
- 1 heaping C grated carrots
- 1/2 C chopped walnuts (optional)
- 1/4 C raisins
- 1/2 C cream cheese (4 ounces), softened
- 1/4 C salted butter, softened
- 2 C powdered sugar
- 1 t vanilla extract
- Pinch of salt
- 1/4 t cinnamon
